Provence Potatoes

Cooking and entertaining is something I've always loved to do. And growing up in a big family -the oldest of six active kids- I had to simplify and hasten recipes to adapt to our busy household. Potatoes were always a popular dish, because they were cheap, filling, easily prepared and could play a supporting role in any meal. My trick: dress 'em up using a higher-end spice to season the potatoes: Herbes de Provence. Herbes de Provence is a combination of herbs, usually consisting of thyme, rosemary, marjoram and savory.
